This mommy came to me with pictures that a model had taken, so we tried to recreate those pics, and I think this mommy is way more beautiful than the "model" she showed me originally. She made the shoot so easy and effortless. It was incredible.

Corpus Christi Photographer/Chocolate Chip Cookie recipe

I have to share this recipe. These cookies are soft, not too gooey and just melt in your mouth!

Chocolate Chip Cookies

Each unit batch makes about 30 to 40 cookies 1 ½ ” to 2 ” in finished diameter; multiply as desired
(The yield may be lower if you eat too much of the dough.)

Mix dry ingredients:
2 1/3 cups of all purpose flour
½ tsp salt
½ tsp baking soda

Soften 1 stick of margarine or butter (do not melt, merely soften)
(I prefer Imperial brand)
Blend in ¼ cup of plain old white sugar
Blend in ½ cup of brown sugar, packed
Add 1 egg
Add ¾ tsp vanilla extract
Mix well

Add dry ingredients; the mixture will be stiff
(This is the key to keeping the finished cookie tall and soft. Less than adequate flour will lead to chocolate chip crackers like most people make)
Add about 12 oz of semi sweet chocolate chips
(Remember that the dough serves merely as a binder. The real purpose of the cookie is to be chocolate delivery device.)

Spoon onto a greased cookie sheet
(I use teaspoons to get spheres about 1 ” in diameter.)

Preheat oven to about 380 F

Bake for about 9 to 11 minutes, depending on the color of the cookie sheet
(I have a bright, newer sheet that takes 11 minutes and an old, discolored sheet that takes about 9 minutes)

Do not over bake; check for the color of the peaks. They should be just turning medium brown.

Cool on waxed paper

Eat while warm accompanied with very cold milk

Day old cookies can be partially rejuvenated by microwaving them at about 8 seconds per cookie

That is a stock photo. We ate them all before I took a picture! It is a good idea of what they look like.

I got the pleasure to work with 2009 Carroll Grad Lindsey Mahone. Her style and personality really shine through in her photographs. Her smile is incredible. She truly is an "all star" and not just because she made the Basketball All District and All South Texas lists, and has a scholarship to Division I Eastern Michigan, and was awarded Carroll's Most Valuable Player award. She is an all star in my eyes and all of those who know her because she is a great person. I only got to know her briefly and I was very impressed with her. Like I said she has great style, a wonderful smile and a wonderful sense of humor. She is grounded despite all of her success and is focused on her upcoming freshman year. The funny thing was the first time I meet with her, it turned I knew her parents from way back when, before she was born! Man I am getting old! I will say I was just a teen back then. I wish Lindsay the best of luck in her future endeavors. It is great to know a bright and shining star!

Fiesta de los Ninos auction winners! Corpus Christi Charity Fundraiser for Driscoll Childrens Hospital

Last year Fiesta de los Ninos raised over a half million dollars to support Driscoll Children's Hospital. Every year I donate a package to be auctioned to the highest bidder. Last year a wonderful family of four won.

This year it was a sweet little baby boy, just 3 months old, and already growing big with sparkling blue eyes.

He was a little wobbly, the tall ones usually are at this age, but he did great, and the proceeds go to help another child in need.

Knowing our donation helps a child is a great reward for all of us. Funds raised will ensure that Driscoll Children’s Hospital will have the flexibility to meet the needs of all of it's patients.

A needed change....

In the past, change was not a good thing for me. I had to have everything scheduled and solid. I did not take many chances. A friend of mine recently was let go from her job she loved and thought was secure. At first I was mortified for her as she was as well, then I realized the ole saying, "when one door closes another door opens". I know she is upset about her change, but perhaps what awaits her is bigger and better than what she has ever known... and she would have never known it, if it were not for "change". I wish her the best. I have a feeling something great is in store for her.

My new site is up. Still working out some kinks in it. I felt I needed a change. Change can be scary, afraid of the unknown, but it can also be wonderful. So today is the day I welcome it. I hope you like my site. I am offering more products. Feel free to comment!

Now, for this blog, it needs some serious help. I am still looking for away to improve it, then perhaps I will want to write in it every day and maintain it. The only ones who look at this are my hard core fans. So be watching for something new and hopefully stimulating!

We got some pics! Corpus Christi Beach Photography

Corpus Christi is notoriously windy year around but believe it or not, there is a time of the year that is not as windy as other times, and we are not in that season. I have been trying to get beach pictures of this family for a month now, and yesterday the wind gave a break! Everyone looked fantastic in their white and khaki's. The surf gently broke against the shore, and of course I found some color.

The Wind!

The wind has finally given a break! Today I will be a the beach shooting a family session after we have rescheduled four times due to the crazy wind! I normally don't book beach sessions in the Spring due to the seasonably high winds and gusts we get in Corpus Christi. However, we are now in Summer and the wind has been crazy! I m hoping to go out this evening and find the wind has settled even more. The temp is a perfect 82 degrees. No clouds, should be perfect!
